SAUTEED RED BELL PEPPERS AND BABY CORN
2 tablespoon vegetable oil
1/2 cup chopped onion
2 large red bell peppers, deveined, seeded and cut into 1/4-inch strips
1 can baby corn on the cob, drained
Salt and black pepper to taste
Heat the oil in a skillet. Stir in the onion and cook for 1-2 minutes or until wilted. Add the pepper strips and cook, stirring occasionally, for 2 minutes.
Add the corn to the onion-pepper mixture. Season with the salt and black pepper and cook for 3-4 minutes, or until the corn is heated through. Serve hot.
