Recipe: Bucheron Cheese with Herbs (homemade herbed goat cheese, make ahead)

2 cups good, fruity olive oil
3 cloves garlic, peeled and halved
1/4 cup minced fresh parsley
1/4 cup minced fresh chives
3 tablespoons minced fresh basil
1 teaspoon dried thyme
1 teaspoon ground black pepper
1 1/4 pounds Bucheron goat cheese, left whole or cut into 1/2-inch slices
Heat the olive oil in a saucepan until it starts to smoke. Remove it from the heat and let it stand for 10 minutes.
Stir in the garlic, parsley, chives, basil, thyme, and pepper. Let it cool to room temperature.
Place the Bucheron in a serving bowl and pour the oil and herb mixture over it. Cover and refrigerate for at least 3 days. (The cheese will keep for a week or more in the refrigerator.)
Bring to room temperature before serving.
Makes 6 to 8 servings
