Recipe: Make It at Home Cranberry, Feta and Roasted Walnut Salad (some ideas)

The following article said that the restaurants's salads like Panera's Orchard Salad, Trocadera Bistro Salad, Bucca de Beppo Gorgonzola Apple Salad, South Beach Diet/ Kraft Cranberry Walnut Salad were all similar in their construction. Just some of the ingredients need to be substituted in the recipe. (see recipe below).

From side bar: Panera's Orchard Harvest Salad-- Field greens, crisp romaine, dried cherries, fresh pears, Gorgonzola, toasted pecans and cherry balsamic vinaigrette.

MAKE IT AT HOME CRANBERRY, FETA AND ROASTED WALNUT SALAD

Makes 4 servings

1 package (10 ounces) mixed salad greens
1 cup sweetened dried cranberries
1 package (4 ounces) Athenos crumbled feta cheese
1/2 cup coarsely chopped walnuts
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 teaspoon ground black pepper
1/4 cup extra-virgin olive oil

Layer salad greens, cranberries, cheese and walnuts in shallow salad bowl or on large serving platter.

Whisk together vinegar, honey, mustard and pepper in small bowl. Slowly add oil in a thin stream, whisking constantly until well blended. Pour over salad. Toss gently to coat.
