Recipe: Fresh Vegetable Appetizer Pizzas

Appetizers and Snacks
FRESH VEGETABLE APPETIZER PIZZAS

1 1/4 cups assorted fresh vegetables (broccoli, carrots, red onion, yellow summer squash, red bell pepper, mushrooms)
1/4 teaspoon salt
dash pepper
1/4 cup halved pitted Kalamata olives*
1/4 teaspoon grated lemon peel
1 (4 to 6 oz) container garlic-and-herb spreadable cheese
5 (6-inch diameter) whole wheat flatbreads
1/3 cup Cheddar cheese, finely shredded**

Place vegetables in small bowl; sprinkle with salt and pepper. Add olives and lemon peel; toss.

Spread 2 tablespoons spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture. Sprinkle with cheddar cheese.

Cut each into 6 wedges to serve.

*Ripe olives can be substituted for the Kalamata olives.

**Crumbled feta cheese can be used in place of the Cheddar cheese.

Makes 30 servings
