Recipe(tried): Cabin Cooking - Here Are Some Ideas For You!
Recipe CollectionsHello Caroline!
I highly recommend Cabin Cooking, a Williams-Sonoma cookbook which is my best friend when we go to up to our cabin in North Carolina.
The book has breakfast, lunch, dinners and dessert recipes to die for...some of them are:
Raisin Bread French Toast with Sauteed Pears
Griddle Cakes with Pecan-Maple Syrup
Brown Sugar Bacon
Mixed Mushroom Omelette
Canadian Bacon Hash with Poached Eggs
Old Fashioned Buttermilk Biscuits
Chorizo and Spinach Scramble
Cabin Potatoes
Overnight Carrot Muffins
Lunch
Stuffed Summer Sandwich
Chicken Caeser Salad
Spiced Lentil & Rice Soup
Tortilla Soup with Lime
Greek Rice Salad
Dinner
Chicken Pot Pie
Winter Pot Roast
Bean and Sausage Chile
Baked Rigaroni with Beef Ragu
Dessert
Spiced Pear Cake
Banana Oatmeal Power Cookies
Peach Raspberry Pie
Lemon Pudding Squares
Plum Crumble
For a big crowd such as yours, I would make big casserole dinners such as:
Lasagna, Italian Salad, Crusty Italian Bread and Lemon Almond Iced Cupcakes
Chile, Cornbread and Brownies
Chicken Pot Pie, French Bread, Frozen Waldorf Salad and Loaded Oatmeal Iced Cookies
Spaghetti & Meat Sauce, Green Vinaigrette Salad, Bread Rolls and Italian Ices
Chicken & Yellow Rice, Tossed Greens with Vinaigrette Dressing, Rolls, Carrot Cake
Meat Loaf, Smashed Garlic Potatoes, Green Beans, Rolls & Banana Nut Cake with Cream Cheese Frosting
Fried Chicken Salad, Muffins and Fruit Cup Dusted with Powdered Sugar
For breakfasts I would have:
1. assorted yogurts, blueberries, cut-up cantalope, granola to sprinkle on, fresh juices and muffins...
2. bacon, a large platter of scrambled eggs, morning potatoes, and biscuits, assorted juices and coffee
3. Any kind of quiche, juices, coffee and muffins
4. Coffee cake, juices, coffee, overnight breakfast casserole, morning potatoes and toast
5. Sausage, scrambled eggs, muffins or biscuits, morning potatoes, coffee and juices
For lunchs, lots of sandwich cold cut meats and cheeses, rolls, mayo and mustards...let them help themselves. Also have on hand crackers and assorted cheeses, lots of grapes and fresh fruit out on the table.
Let me know if you want any of the recipes, especially the morning potatoes, quiches, muffins and overnight casseroles as well as any of the dinner menu ideas as I have great recipes for all the dinners given! I will be glad to post them for you.
It is always so much fun to go the cabin! We go in October when the weather turns real cool...
Happy Cooking! Gina
