Recipe: Caesar Salad Dressing (using buttermilk)

CAESAR SALAD DRESSING

2 teaspoons spicy hot and sweet mustard
1 teaspoon anchovy paste
1 clove garlic, crushed
1/2 cup nonfat buttermilk
1/4 cup grated Parmesan cheese
2 tablespoons dry white wine
2 tablespoons red wine vinegar
1 tablespoon chopped fresh parsley
1 tablespoon fresh lemon juice
1 tablespoon olive oil

Combine mustard, anchovy paste and garlic in a small bowl; stir well.

Add buttermilk and the remaining ingredients, stirring with a wire whisk until blended. Cover and chill.

Serve over mixed salad greens or torn romaine lettuce.

Makes 1 cup
