Recipe(tried): Carrot salad w/ Raspberry Vingarette
Misc.If you are looking for ways to use carrots I added a nice sandwich recipe.
This is a refreshingly different carrot salad.
CARROT SALAD/RASPBERRY VINGARETTE
In a food processor, chop together.........
2/3 c. fresh parsley leaves
1/4 c. oil
3 T. raspberry vinegar
2 t. dijon mustard
1 t. sugar
1/2 t. cinnamon
1/2 t. salt
Remove from processor and put in bowl.
Put in grater blade and grate.......
2 lbs. carrots
Add to dressing stir and chill.
It should be eaten within 2 days.
Without a processor: chop the parsley with a knife, whip the dressing ingredients together and grate the carrots.
CHEESE VEGETABLE SANDWICH
Combine.............
1/4 c. cottage cheese
1 carrot grated
1/2 c. mushrooms, choppeed
1/2 c. alfalfa sprouts, chopped
1/4 c. celery, chopped
2 T. radish, chopped
1 green onion, chopped
1/2 t. dried whole basil
Divide put on toasted bread. Top with cheese and broil to melt cheese.
4 slices toasted lt. wheat bread
4 slices low fat american cheese
4 servings
