Gina, found this recipe for Chewy Molasses Cookies in Betty Crocker's Cookies thought that you would like to have it.
CHEWY MOLASSES COOKIES
1/2 cup sugar
1/3 cup shortening
1/2 cup molasses
2 tablespoons milk
2 teaspoons vanilla
2 eggs
1 1/2 cups Gold Medal all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1 cup currants
1/2 cup chopped nuts
Mix sugar and shortening in medium bowl. Stir in molasses, milk, vanilla and eggs. Stir in remaining ingredients except currants and nuts. Stir in currants and nuts. Cover and refrigerate 3 hours or until firm.
Heat oven to 350 Degrees F. Lightly grease cookie sheet.
Drop dough by 1/4 cupfuls about 2-inches apart onto cookie sheet.
Bake about 17 minutes or just until center is set. Cool 1 to 2 minutes before removing from cookie sheet.
Makes about 12 cookies
VARIATION:
SMALL CHEWY MOLASSES COOKIES:
Prepare as directed - except drop dough by scant teaspoonfuls onto cookie sheet. Bake about 15 minutes. Makes about 4 dozen cookies.
