CHICAGO SCHOOLS BUTTER COOKIES
1 pound (2 cups) butter, softened to room temperature
1 1/2 cups sugar
3 1/2 cups flour
2 teaspoons vanilla
Mix butter with beater until soft and creamy. Mix in sugar until creamy and smooth. Mix in flour, adding small amounts at a time to mix it all evenly. Stir in vanilla. After mixed well, leave in fridge for about 20 minutes.
TO SHAPE AND BAKE:
Preheat oven to 350 degrees F.
Take out and spoon out about a tablespoon size ball. Roll in hands. Place about 2 inches apart on ungreased cookie sheet. Press down with your three fingers. This is what gives them the ridges you remember from school.
Bake for 10-13 minutes. Look at them to see the desired darkness.
