Recipe: Chicken Adobo (with garlic, onion and potatoes, Filipino)

CHICKEN ADOBO

"Yes, it is, indeed, a Filipino dish. I like to do this the quick and easy way. Since I just cook for myself, this is usually good for around 3-4 meals, depending upon how hungry I am. This should serve around 2-4 people, comfortably." - author unknown

1 lb. chicken pieces
2 to 3 cloves of garlic, crushed
1 onion, sliced
1 bay leaf
5 to 10 whole peppercorns
2 potatoes (cut them any way you want, but not in the french-fry style)
2 tablespoons soy sauce
2 tablespoons white vinegar
2 tablespoons sugar
Hot cooked rice (for serving)

Put it in a good-sized pot. Add remaining ingredients, except rice; mix lightly. Put it over low to medium low heat; cover and cook for around 1 hour at the least (the longer it goes, the more flavorsome it is).

Remove bay leaf and serve over rice.
