Recipe: Chicken and Vermicelli (using cooked chicken, cherry tomatoes, and pine nuts)

CHICKEN AND VERMICELLI

8 ounces uncooked vermicelli
2 tablespoons olive or vegetable oil
1 tablespoon chopped pine nuts
2 teaspoons chopped fresh parsley
2 teaspoons large capers, drained and chopped
1/4 teaspoon dried rosemary leaves
1/4 teaspoon dried sage leaves
1/4 teaspoon dried basil leaves
1 cup cherry tomatoes, cut into fourths
1 1/2 cups cut-up cooked chicken
Freshly ground pepper

Cook vermicelli as directed on package.

Meanwhile, mix remaining ingredients except tomatoes, chicken and pepper in medium bowl. Stir in tomatoes and chicken.

Drain vermicelli; toss with chicken mixture. Serve with pepper.

Makes 4 servings
