OATMEAL MUFFINS
1 cup cooked oatmeal
1 cup buttermilk
1 egg
1/2 cup packed brown sugar
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup margarine, melted
Soak oatmeal in buttermilk for 1 hour.
Sift flour, salt, baking powder and baking soda; set aside.
Beat together egg and brown sugar. Stir the oatmeal and egg mixture together. Stir in the flour mixture. Add margarine. Spoon into greased muffin tins or muffin liners, filling two-thirds full.
Bake at 400 degrees F for 20 minutes.
Makes 12 muffins
