chicken caccitore
1 large onion,chopped
1 large green bellpepper, chopped
1 large pkg. of mushrooms,sliced
1/4 tsp. garlic powder
1 and a half tbsp. of basil leaves,same amount for parsley
1 tbsp/ oregano
2 cloves garlic, minced
1-12oz. can tomato paste
1-8oz.tomato sauce
1 very large can tomatoes,crushed
1 tsp.salt,about 1/4 tsp. pepper
1 tsp. baking soda
2 tbsp. sugar(brown sugar)
1 cup dry red wine
10 pieces chicken
what ever kind of pasta you want to serve
Layer chicken in a large baking pan.Brush with margarine.Season
with salt and pepper & any other seasoning you may want to use.
Bake 0ne hour at 350degrees.
In a large pot add a lttle olive oil& brown the onion,peppers and
garlic,until wilted.add seasonings, paste,sauce & Tomatoes. Add bak-
ing soda and wine.
Let cook all day or just and hour. Add mushrooms when sauce is half done.
Pour sauce over chicken and let bake 45 minutes. Serve with your favorite
kind of pasta.This recipe did not come from a cookbook,I have just added
ingredients I like. My family loves it. Hope You will to.
