Recipe: Red Snapper Almondine (serves 1 or 2)

RED SNAPPER ALMONDINE

FOR 1 SERVING:
6 ounces red snapper fillets*
1 tablespoon milk
2 tablespoons bread crumbs
Salt and pepper to taste
1 tablespoon butter
1 tablespoon slivered almonds

FOR 2 SERVINGS:
3/4 pound red snapper fillets*
2 tablespoons milk
1/4 cup bread crumbs
Salt and pepper to taste
2 tablespoons butter
2 tablespoons slivered almonds

Dip fillets in milk and then coat with bread crumbs which have been seasoned with salt and pepper.

Melt butter in a skillet over medium-high heat. Saute fillets in butter until golden brown and fish flakes easily when tested with a fork. Remove fish to a heated serving plate.

Saute almonds in pan drippings and spoon over fish.

*You may substitute fillet of sole for the red snapper in this recipe.
