Recipe: Fried Zucchini Rounds (using Bisquick and Parmesan, 1980's)

FRIED ZUCCHINI ROUNDS

1/3 cup baking mix (like Bisquick)
1/4 cup Parmesan cheese
1/8 teaspoon ground black pepper
2 eggs, slightly beaten
2 cups shredded zucchini
2 tablespoons butter

Mix first 5 ingredients in order listed. 

Melt butter in a skillet. Drop batter by spoonfuls into hot skillet. Fry until golden brown, turning to brown both sides.
