Recipe: Chicken Hash with Asparagus, Tomatoes and Bacon

CHICKEN HASH WITH ASPARAGUS, TOMATOES AND BACON

1 1/2 medium onions, diced
2 to 3 tablespoons bacon drippings
3 boneless, skinless chicken breast halves, cooked and diced
3 cooked medium potatoes, diced
6 to 8 strips bacon, fried crisp and crumbled
8 asparagus stalks, cooked and chopped
4 tomatoes, diced
Salt, pepper and garlic
8 poached eggs (optional)

In a large frying pan, cook the onion in the bacon drippings until translucent.

Stir in the chicken and potatoes. Cook over medium-high heat, stirring, until nicely browned.

Stir in the bacon, asparagus, tomatoes and salt, pepper and garlic to taste. Heat through and serve, topped with poached eggs if desired.

Makes 8 servings
