LEMON FRIED CHICKEN
3 pounds broiler-fryer chicken parts
1 1/4 cups Mazola corn oil, divided use
1/4 cup lemon juice
2 cloves garlic, minced or pressed
1 teaspoon dried oregano leaves
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup unsifted flour
1/2 teaspoon paprika
Place chicken in large shallow dish.
Stir together 1/4 cup of the corn oil, lemon juice, garlic, oregano, salt and pepper. Pour over chicken. Cover; refrigerate several hours or overnight, turning occasionally.
TO COOK:
Drain chicken on paper towels.
In a plastic bag, combine flour and paprika; shake to mix well. Add chicken, one piece at a time; shake to coat well.
In large skillet, heat remaining 1 cup corn oil over medium heat. Carefully add chicken. Fry, turning once, 20 to 30 minutes or until chicken is fork-tender and golden brown. Drain on paper towels.
Makes 4 servings
