Recipe: Chicken Kiev (4C Bread Crumbs recipe)

CHICKEN KIEV

2 whole chicken breasts, boned, skinned and halved
2 eggs, lightly beaten
1 cup Italian flavored bread crumbs
Fat for frying
1/2 cup butter, softened
2 tbsp grated parmesan cheese
1 tbsp minced parsley
1 small clove garlic, minced
1/4 tsp salt
1/4 tsp pepper
1/4 tsp oregano

Place chicken between waxed paper and pound to 1/4 inch thickness. Remove paper.

Combine butter, parmesan cheese, parsley, garlic, salt, pepper and oregano. Shape into a roll and chill until hard.

WHEN CHILLED:
Cut into 4 pieces and place one on each chicken breast. Roll up over butter and tightly secure with toothpicks. Roll chicken in bread crumbs. Dip into beaten eggs, then roll again in Crumbs. Chill one hour.

WHEN READY TO COOK:
Fry in deep fat preheated 360 degrees F until golden brown, (5 to 8 minutes.) Drain in paper towel.

Makes 4 servings
