Recipe: Mini Meat Loaves with Spaghetti (Campbell's soup ad, 1960's)

MINI MEAT LOAVES WITH SPAGHETTI



1 pound ground beef
1/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1 egg, slightly beaten
3/4 cup finely chopped onion, divided use
1 1/2 teaspoons oregano, crushed, divided use
1/4 teaspoon salt
2 cans (10 3/4 ounces each) Campbell's Condensed Tomato Soup, divided use
1 tablespoon shortening
1/2 cup water
1 large clove garlic, minced
FOR SERVING:
4 cups cooked spaghetti (about 8 ounces uncooked)

Combine beef, bread crumbs, cheese, egg, 1/4 cup onion, 1/2 teaspoon oregano, salt and 2 tablespoons (undiluted) soup. Mix thoroughly; shape into 4 small loaves.

In skillet, brown loaves in shortening; add remaining ingredients except spaghetti. Cover; cook over low heat 30 minutes. Stir now arid then.

Serve meat loaves and sauce over spaghetti.

Makes 4 servings
