CURRIED CHICKEN LIVERS WITH POTATOES

Serves 2
14ozs potatoes, cooked & sliced
4ozs onion, finely chopped
2 cloves garlic, crushed
4ozs red/yellow bell peppers, diced
6ozs chicken livers, bite-size pieces
2tsps curry powder
1-1/2tbsps water
pepper
1tbsp chopped parsley
1-1/2tbsps LF plain yogurt
Place curry powder in non-stick pan with water & fry 1min. Add onion, garlic &
capsicum & cook 1min. Add livers & parsley, & cook, stirring frequently, 3-
4mins. Add potatoes & stir-fry 2mins. Season. Stir in yogurt & serve.

LIVER PAPRIKA POTATOES

Serves 2
1lb potatoes, sliced
scant cup skim milk
Paprika
1/4lb onion, chopped
1/4lb chicken livers, chopped
14-15oz can chopped tomatoes
1tsp basil
2 dashes Worcestershire sauce
Place potatoes in shallow ovenproof dish, sprinkling each layer with paprika,
add milk & cook 1hr at 190C. Place onion, livers, tomato, basil & sauce in
another shallow dish & cook alongside potatoes for last 40mins. Serve together.

SPAGHETTI WITH CHICKEN LIVER SAUCE

Serves 4
11ozs chicken livers, chopped
2ozs ham, finely chopped
1/2lb mushrooms, roughly chopped
6ozs onion, finely chopped
1/3cup tomato sauce
1/2tsp mixed herbs
1cup+2tbsps water
chicken stock cube
pepper
4tsps cornstarch
8ozs spaghetti, cooked
Place livers, ham, mushroom, onion, puree, herbs, water & stock cube in a
saucepan & season with pepper. Cover, bring to boil & simmer gently 15mins.
Blend cornflour with a little cold water & add to pan stirring continuously.
Simmer 1-2mins. Serve on spaghetti.
