Recipe: Plantain Soup for Randy

You must have great memories of your grandmother and her cooking. Here is a Sopa de Platanos recipe for you. Keep in mind, that the chicken can be added in place of the beef. It is indeed a very tasty soup and your recollection of it is correct. PLANTAIN SOUP (SOPA DE PLATANOS)
Servings: 4
It is very easy to prepare.
1/2 lb. beef round
1 soup bone
6 cups of water
1 tbs of salt
3 cloves of garlic
3 tomatoes
1 green pepper
1 spring parsley
1 onion
2 cups pulverized plantain chips
1 cup plantain chips, whole (for garnish)
Cut meat into two inch cubes. Place all ingredients in a large casserole and allow to stand for half an hour. Bring ingredients to boil, reduce to medium heat and simmer for approximately 2 hours, keeping casserole tightly covered. Strain broth.
For each cup of broth add 1/2 cup of pulverized green plantain chips. Mix well.
Reheat before serving and top with whole chips before serving.
