Recipe: Brown Rice Pilaf (with onion and mushrooms, baked)

BROWN RICE PILAF

1/2 cup brown rice
1/3 cup chopped onion
1/3 cup chopped mushrooms
1/8 teaspoon dried thyme
1 1/4 cups chicken broth
1/2 cup thinly sliced celery

Preheat oven to 350 degrees F.

Combine the rice, onion, mushrooms, and thyme in a 1 quart casserole. Stir in broth.

Cover and bake for 1 hour. Add celery and mix well. Cover and bake for 10-15 minutes or until celery is just tender and liquid is absorbed.

Makes 4 servings
