Recipe(tried): Chicken Noodle Soup

of course i don't know how your mom make her chicken noodle soup but this an is easy, delicious and light soup that i like. hope you like it. it says using a dutch oven, but any regular pots will do. and the recipe is easily divided into 1/2 if you don't need to cook that much.

Chicken Noodle Soup
Low calorie
Makes 6 to 8 servings

2 T. vegetable oil
1 medium onion, cut into medium dice
1 large carrot, peeled and sliced -inch thick
1 celery stalk, sliced -inch thick
t. dried thyme leaves
2 quarts homemade/store-bought chicken stock
2 cups shredded, cooked chicken breast meat
2 cups wide egg noodles
cup minced fresh parsley
Salt and ground black pepper

Heat oil in Dutch oven over medium-high heat. Add onion, carrot, and celery; saut until softened, about 5 minutes. Add thyme, along with stock and shredded chicken meat; simmer until vegetables are tender and flavors meld, 10 to 15 minutes.
Add noodles and cook until just tender, about 5 minutes. Stir in parsley, and salt and pepper to taste; adjust seasonings and serve.
