Recipe(tried): Chicken Spinach Linguine, Tomato and Mozzarella Salad

Good Afternoon Everyone!

Yesterday I went and visited the new Costco in town and they were giving away a free 1 year membership, so I said, "why not", signed up and went in. I came across a container of buffalo mozzarella cheese and had them with tomatoes last night in a most delightful salad. Thus, the mozzarella is what inspired tonight's meal.

We will enjoy Chicken Spinach Linguini, Garlic Bread and Tomato & Mozzarella Salad.

I haven't quite decided what the Christmas Menu is this year, it will only be Mama and DH so it will be small. DH voted out having a Cuban menu and we are thinking about ham...

Chicken Spinach Linguine
serves 2

2 boneless, skinless chicken breasts, cut into chunks
2 garlic cloves, minced
salt and pepper to taste
3 Tbsp. olive oil
1 tsp. dried oregano
2 Tbsp. fresh basil, chopped
2 Tbsp. coarsely chopped sun-dried tomatoes
2 Tbsp. pine nuts
1 tsp. nutmeg
1 bag fresh spinach leaves, washed and rinsed
1/4 cup chicken broth
2 Tbsp. white wine
2 cups heavy cream
1 cup parmesan cheese
4 cups cooked al dente linguini

In a bowl, marinade chicken chunks with garlic, salt, pepper, basil leaves, oregano, sun-dried tomatoes, and olive oil. Cover and chill for 4 hours. Saute in skillet til chicken is golden, add spinach, nutmeg and pine nuts, lower heat and wilt spinach. Deglaze pan with wine and chicken broth. Bring to a boil, add crfeam and Parmesan cheese, stirring til nice and thick and bubbly. Add linguini and toss to coat well. Serve with salad and garlic bread.

Tomato and Mozzarella Salad
serves 2

1 tomato, washed and sliced
salt and pepper to taste
a sprinkling of balsamic and olive oil
1 ball of mozzarella cheese
3-4 fresh basil leaves, minced

Place sliced tomatoes on a plate, sprinkle with desired amount of salt, pepper, balsamic and oil. Slice mozzarella and layer on top of tomato. Sprinkle basil all over.
