Recipe: Hash Muffin Squares (using corn muffin mix)

HASH MUFFIN SQUARES

1 can corned beef hash
1/2 cup finely chopped onion
1 egg, beaten
1 (8 1/2 oz.) package corn muffin mix
1/2 teaspoon salt
3 Tablespoons grated Parmesan cheese

Mix hash, onion and egg; set aside.

Prepare muffin batter according to package directions. Add salt and cheese to batter.

Spread half the batter in greased (8-inch) square pan. Spread on hash mixture. Top with remaining half of batter.

Bake in preheated oven at 300 degrees F about 25 to 30 minutes. Remove from oven and let set for a few minutes. Cut in squares and serve.

Makes 6 servings
