Recipe(tried): Chin chin Main Mein Noodle Salad (Maria's Version)

I developed this recipes over a year when I missed Chin Chin's Main Mein. I wrote to them and they of course told me NOTHING so I made it on my own.

I have seen previous postings and know they are way off base. There are no broccoli florets in Main Mein. So here is my version that comes pretty dang close to the real thing, from on who has tasted Chin Chin's Main Mein. Try it and let me know if it is THE REAL THING.

CHIN CHIN'S MAIN MEIN NOODLE SALAD:

FOR THE DRESSING:
1/2 cup smooth peanut butter
1/4 cup seasoned rice wine vinegar
1/4 cup white vinegar
6 cloves garlic, minced
1 (2-inch) piece fresh ginger, peeled and minced
1 Tbsp. green taco sauce
1 Tbsp. Tabasco sauce
1 tsp. crushed red pepper flakes
1 tsp. white pepper
FOR THE SALAD:
1 lb. fine Chinese egg noodles, boiled and rinsed under cold water.
2 cups white bean sprouts
5 oz. cooked chicken breast, diced
1 large cucumber, peeled, deseeded and sliced
1 large carrot, shredded
3 green onions, julienned

Blend all the dressing ingredients together in a blender until smooth.

Place the salad ingredients in a large bowl. Toss all together with dressing. Serve immediately.

Tastes so close to Chin Chin's Main Mein Noodle Salad. I developed this recipe for 2 years because I missed the salad so much when I moved out of LA.
