CHINESE GARLIC AND HONEY BBQ CHICKEN
1 chicken , cut into 8-10 pieces
(leave its skin on because this is the best part - take a day off your diet!!!)
FOR THE MARINADE:
1/2 glass soya sauce
3 to 4 cloves of garlic thinly sliced
1 tablespoon oregano
2 tablespoons honey
1 teaspoon grated ginger
a pinch of pepper
(do not add any salt as soya sauce is quite salty)
Mix marinade ingredients in large bowl. Put chicken pieces in marinade and roll over so that it is soaked in marinade.
Leave in fridge for 2-3 hours before you cook.
Barbecue chicken over charcoal until well cooked. Baste with remaining marinade (until last 5 minutes of cooking; discard remaining marinade). Its skin should turn dark brown, don't worry it's the honey being caramelized. It's simply delicious.
