OVEN-FRIED CHICKEN
1 cup Hungry Jack Mashed Potato Flakes
1 tsp. salt
1/4 to 1/2 tsp. poultry seasoning
1/4 tsp. black pepper
1/4 tsp. rosemary, crushed
1 egg, slightly beaten
1 tsp. lemon juice
2 1/2 to 3 lb. frying chicken, cut up
Preheat oven to 375 degrees F.
In a plastic bag, combine potato flakes and seasonings.
In a shallow bowl, combine egg and lemon juice.
Dip chicken pieces in egg mixture, then shake in plastic bag.
Place chicken skin side up in an ungreased 15x10-inch jelly roll pan.
Bake uncovered at 375 degrees for 60-75 minutes or till chicken is done and tender.
Servings: 6
