Recipe: Chicken and Rice Pilaf (using onion soup mix) for Ileana (repost)

CHICKEN AND RICE PILAF

4 boneless, skinless chicken breasts
Salt, pepper, and paprika
1 1/4 cups chicken broth
1 cup regular uncooked rice
1/2 pkg. dry onion soup mix
1 10 3/4 oz. can condensed cream of mushroom soup
2 T. diced red bell pepper

Sprinkle chicken breasts with salt, pepper, and paprika. Mix chicken broth, uncooked rice, onion soup mix, cream soup, and red bell pepper together; put in an 11x7x1 1/2-inch baking dish that has been coated with PAM. Place chicken breasts on tp of rice mixture. Cover dish with foil and freeze.

To prepare for serving:
Thaw chicken dish and preheat oven to 375 degrees.

Bake, uncovered, for 1 1/4 hours or until chicken and rice are tender.

Makes 4 servings.

This dish can be doubled easily. Bake one and freeze one. You'll have supper one night already finished. Serve with marinated vegetables and rolls.
