CHOCOLATE MOCHA STEAMED PUDDING CAKE
Makes 4 generous servings and best served warm with ice cream. It's easy to prepare and bakes in microwave oven.
1 cup self-rising flour
1/8 tsp. salt
3/4 cup white sugar
1/3 cup baker's unsweetened cocoa powder, divided use
1/2 cup milk
1/4 cup butter, melted
1 tsp. vanilla extract
1/2 cup brown sugar
1 1/2 cups strong hot coffee*
Sift flour, salt, white sugar and 2 tablespoon of the cocoa powder into a 1 quart microwave bowl or souffle dish. Stir in the milk, melted butter and vanilla. Mix well and scrape down the batter in the bowl and level the batter.
Sift the combined brown sugar and remaining cocoa powder over the above mixture and level.
Pour hot freshly brewed coffee carefully over the top.
Microwave the pudding cake on high power for 8-10 minutes or until the sauce bubbles up to the surface of the cake
*If you want a subtle mocha taste use weakly brewed coffee or substitute another hot beverage such as chai or hot water.
