FRESH FRUIT CAKE
''This delicious recipe originated in Germany and has been handed down through the years in my wife's family."

4 apples, peaches, or plums
1/2 cup (1 stick) plus 1 tablespoon butter or margarine, divided use
1 cup sugar, divided use
1 egg
2 teaspoons baking powder
1 1/2 cups sifted all-purpose flour
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
Whipped cream or ice cream (for serving)
Heat oven to 350 degrees F.
Peel, pit, and cut fruit into 1/2-inch slices; set aside.
Cream 1/2 cup butter with 3/4 cup of sugar. Add egg; set aside.
Mix baking powder with flour. Gradually add to butter mixture. Add vanilla. Pour batter into greased and floured 9-inch round layer-cake pan. Place sliced fruit on top.
Mix remaining 1/4 cup sugar with cinnamon and sprinkle over top. Dot with remaining butter.
Bake for 30 minutes or until toothpick inserted near center comes out clean.
Serve with whipped cream or ice cream.
Makes 1 (9-inch, single-layer cake), 6-8 servings
