Recipe: Smothered Cucumbers

Smothered Cucumbers
This combination of crisp cucumbers and sour cream makes a refreshing summer salad.
Serves 6

2 Medium cucumbers, sliced
peeled if desired
1 tsp. salt
1 tsp. celery seed
1/4 tsp. ground black pepper
1 tbl. sugar
2 tbl. white wine vinegar
2 tbl. parsley, minced
2 green onions with tops, sliced thinly
or 1 large sweet onion, thinly sliced
1 cup sour cream
1 or 2 tomatoes, cut into wedges
for garnish

Slice cucumbers into colander. Salt and drain for 15 minutes. Place in large bowl and add remaining ingredients, except tomatoes. Cover and refrigerate
2-3 hours to blend flavors. Just before serving garnish with tomatoes.
