Recipe(tried): Cinnamon Chicken and Creamy Potato Sticks

Everyone needs another chicken recipe! I also served a new (for me) potato recipe and plain ole lima beans and a salad.


CINNAMON CHICKEN
Recipe By :2 Hot Tamales
Serving Size : 4

1 1/2 cups dry sherry
1 teaspoon cinnamon
1/2 cup honey
1/4 cup lemon juice
4 cloves garlic -- minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 frying chicken (about 2-1/2 to 3 lbs) -- cut in pieces
2 tablespoons veg. oil

In a med bowl, mix first 7 ingred. Add chicken and toss to evenly coat. Cover and marinate in refrigerator 8 hrs or overnight. Preheat oven to 350 degrees. Remove chicken, shaking off excess marinade. Pour the marinadde into a small saucepan and bring to a boil. Boil until it begins to thicken and about 1 cup remains, 5 to 10 min. Heat oil in an oven proof skillet over med-high heat. Sear chicken until golden on both sides. Pour the reduced marinade over chicken and place in the oven. Bake about 20 min.


CREAMY POTATO STICKS

Servings: 6

1/4 cup flour
1/2 tsp salt
1 1/2 cups milk
1 (10-3/4oz) can cream of celery soup -- undiluted
1/2 lb Velvetta -- cubed
5 to 6 lrg baking potatoes -- peeled
1 cup chopped onion
paprika

In a sausepan, combine flour and salt; gradually whisk in milk until smooth. Bring to a boil; cook and stir 2 min. Remove from heat; whisk in soup and cheese until smooth. Set aside. Cut potatoes into 4"x1/2"x1/2" sticks; place in a greased 13x9" baking dish. Sprinkle with onion. Top with cheese sauce. Bake, uncovered, at 350 for 55-60 min. or till tender. Sprinkle with paprika.
