CITY CHICKEN OR MOCK CHICKEN LEGS
1 pound ground veal
1/4 pound ground pork
1/4 cup drained crushed pineapple
1 tablespoon chopped green bell pepper
1 teaspoon salt
1/8 teaspoon paprika
2 eggs, slightly beaten
1 tablespoon water
1 cup dried bread crumbs
Hot fat (for pan frying)
Combine veal, pork, crushed pineapple, bell pepper, salt and paprika. Shape like a chicken leg around a wooden skewer.
Combine eggs with 1 tablespoon water.
Dip "chicken leg" in bread crumbs, then in egg mixture, then again in bread crumbs. Refrigerate for 30 minutes.
Brown in frying pan in hot fat. Add a little water (be careful -- it will spatter), then reduce temperature. Cover tightly and let cook slowly for 45 minutes.
Makes 4 servings
