COCONUT LACE WAFERS
1/2 cup sifted cake flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/4 cup light corn syrup
1/4 cup sugar
4 tablespoons unsalted butter
1/2 cup flaked coconut
Preheat over to 350 degrees F. Grease baking sheets.
Into medium-sized bowl, sift flour, baking powder and baking soda. Set aside.
In medium-sized saucepan, combine syrup, sugar and butter. Place over medium-high heat, bring to a boil and cook 1 minute.
Remove from heat and stir into flour mixture. Add coconut. Using a measuring teaspoon, drop batter by level teaspoonfuls onto prepared baking sheet, leaving 3 inches between cookies.
Bake about 6 minutes or until bubbly and lacy looking. Do not over-bake.
Cool until cookies are firm enough to handle but still soft and warm; carefully remove them from baking sheet using thin spatula.
Serve flat or roll while hot around chopstick or wooden spoon handle. If cookies harden before all are rolled, return to oven 1 minute to soften.
