Recipe: Coke Cake and Frosting

COKE CAKE

2 c. unsifted flour
2 c. sugar
1 1/2 c. mini-marshmallows
1 c. (2 sticks) margarine or butter
3 tbsp. cocoa
1 c. Coke (not diet)
1/2 c. buttermilk
1 tsp. baking soda
2 eggs
1 tsp. vanilla
1/4 tsp. salt
Frosting

Grease and flour a 9x13x2 inch cake pan. Preheat oven to 350 degrees.

Combine flour, sugar, and marshmallows in a bowl. Heat margarine, cocoa, and Coke to boiling point and pour over flour and sugar mixture. Add buttermilk, soda, eggs, vanilla, and salt.

Pour batter into prepared cake pan. Bake at 350 degrees for 40-45 minutes or until done. Frost cake while hot.

FROSTING

6 tbsp. Coke
1/2 c. (1 stick) margarine or butter
2 tbsp. cocoa
1 tsp. vanilla
1 lb. box powdered sugar
1 c. chopped pecans or walnuts

Heat Coke , margarine, and cocoa to boiling. Add vanilla, powdered sugar, and nuts; stir till well-mixed. Pour over cake right from oven.
