1. Low-Carb Pizza
We first made this pizza for a few hundred people on the Atkins cruise years ago. Hundreds of people crashed our pizza party, saying our pizzas looked better than the ones the ship was serving! Rachel scared them all away by telling them it was diet food. Diet food? I don t think so. It s just one more great way to enjoy comfort food while living Stella Style!

2. Old-Fashioned Egg Mock Potato Salad
This is a reinvention of my mother s recipe that my family has enjoyed forever! Cauliflower has a neutral flavor that absorbs whatever you add to it, so it s a perfect alternative to potatoes. This is the best use of cauliflower - reinvented as potatoes - I ve ever tasted, and once you ve tasted it I know you ll agree!

3. Stella Style New York Ricotta Cheesecake
Created out of necessity, this utterly decadent and satisfying dessert saved us from giving in to our sugar cravings so many times I ve lost count! After years of loving trial and error, Rachel created the ultimate low-carb cheesecake. But be careful - once anyone tries this cheesecake, they ll be asking you to make it over and over again. We have to take one everywhere we go - or else!
