Recipe: Light-as-a-Feather Gingerbread (1950)

LIGHT-AS-A-FEATHER GINGERBREAD

1/2 cup boiling water
1/2 cup shortening
1/2 cup molasses
1 egg, beaten
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Pour boiling water over shortening.

Combine first 5 ingredients.

Sift dry ingredients together and add to first mixture.

Bake in an 8-inch square pan in moderate oven (350 degrees F) for 35 minutes, or until done. This is a thin batter but do not add more flour.
