Recipe(tried): Cooper Family's Grand Slam Cake

Misc.

"COOPER FAMILY'S GRAND SLAM CAKE"

1 cup mayonnaise
1 cup chopped dates
1 cup boiling water
3 Tablespoons cocoa
1 teaspoon vanilla
1 cup sugar
1 cup chopped walnuts
2 cups sifted flour
1/2 teaspoon salt
1 teaspoon baking soda
*1 teaspoon ground cinnamon (Optional)*
1 can (16 ounces) thick white creamy frosting

Dissolve baking soda in boiling water. Pour over nuts and dates. Let
stand a few minutes. Sift sugar, *ground cinnamon* and cocoa together.
Add to mayonnaise. Add water, dates and nuts and mix well. Add sifted
flour and salt to mixture. Add vanilla. Bake in 2 tins or a loaf pan at
350 F. for 25 minutes. Cool cake and frost with white cake frosting.

HISTORY NOTE: In the original family Grand Slam Cake cake recipe,
cinnamon was NOT optional but was considered to be a part of the cake
recipe. In the second family Grand Slam Cake recipe, cinnamon was considered
optional. The recipe was a traditional dish that was always made for the
entire Cooper family get together dinners including Thanksgiving and
Christmas family dinners by Grandma Cooper. One of Grandma's Cooper's
daughter was named Louella who obtained the recipe from a lady who knew
my other Grandmother (Grandma Bertha Williams!) Aunt Louella gave the
recipe to Grandma Cooper. The recipe is at least 42 years old.
