SoupsCABBAGE SOUP LIKE BIG BOY'S
1 (12-ounce) can V-8 juice
4 ribs celery cut in 2-inch pieces
2 cans (14 ounces each) sliced stewed tomatoes
2 cans (14 ounces each) clear beef broth
1 broth can water
1 smoked pork hock (3/4 pound) or ham steak in bite-size pieces
1 onion, about the size of a lemon, diced
1/4 of a 2 1/2-pound head cabbage, diced and cored and outer leaves discarded
1 (14-ounce) can sliced carrots, undrained and finely diced
1 envelope onion soup mix
1 teaspoon dry minced parsley
Generous dash pepper
Salt to taste if desired
Put V-8 juice and celery into blender and blend on high speed, about half a minute or until minced.
Pour into 6-quart kettle and add each remaining ingredient as listed. Bring to boil. Cover and reduce to gentle simmer - simmering two hours or until cabbage is tender.
Recipe may be cut in half. Freezes well. Thaw and reheat within six months.
Serves 6

BIG BOY'S CABBAGE SOUP
1 cup shredded cabbage
1 cup chopped onions
1/2 cup chopped celery
1/4 cup chopped green pepper
1 quart water
1 quart tomatoes
6 beef bouillon cubes
3 tbsp. sugar
Salt and pepper to taste
Several drops of hot sauce
Cook cabbage, onions, celery and green pepper in 1 quart of water until tender.
Add remaining ingredients. Serve.
Better if it can be made the day before and let stand overnight.

1 can beef broth or French onion soup
3/4 medium head cabbage, chopped
2 white onions, chopped
1 green pepper, chopped
1 Valasic mild pepperoncini, chopped fine
1/2 cup chopped celery
4 cups water
2 to 3 tbsp. brown sugar
1 clove garlic, if desired
2 dashes red hot sauce, if desired
1 (28 oz.) can tomatoes in juice, chopped
In a large pot, place broth, chopped cabbage, onions, peppers, celery and water. Bring to a boil, turn down to simmer.
Add brown sugar and optional garlic and hot sauce. Cook until ingredients are tender, about 1 1/2 hours.
Add chopped tomatoes and juice. Add more water if needed.
Serves 4-6
