Recipe(tried): Corn Fritters

Deb-Don't they have great restaurants in Pigeon Forge? I love the Old Mill. We have a chalet there and go as often as possible. I don't have the Old Mill's recipe but this is the one my Mom always used. I do have the Apple Fritter recipe from the Applewood Farmhouse Restaurant in Pigeon Forge and will also post it.

Corn Fritters
Drain 2 cups cut, fresh corn (6 ears) reserving liquid. (cut off just the tips of kernels, then scrape cobs) Or use one 1 lb can whole kernel corn, drained. Add enough milk to corn liguid to measure l cup.
Sift together 1 l/2 cups sifted all-purpose flour, 2 tsp baking powder and 3/4 tsp salt. Combine l beaten egg milk mixture and corn. Add to dry ingredients. Mix just until flour is moistened.
Drop batter from tablespoon into deep hot fat (375) fry until golden brown about 3 min. Drain on paper towels. Serve with warm maple syrup.
Makes l8 fritters

Applewood Apple Fritters

1 cup milk
1 egg beaten
4 TBSP margarine
l/4 cup sugar
l/2 tsp salt
l orange, rind and juice
1 cup apples chopped but not too fine
3 cups cake flour
2 tsp baking powder
1 tsp vanilla.
Beat egg. In a mixing bowl combine the milk, egg and melted margarine. Add the orange juice, rind, chopped apples (skins may be left on) and vanilla. Sift together the flour, salt, baking powder. Stir into milk mixture with a spoon until blended. Do not overmix. Preheat oil to 350. Drop by tablespoon into hot oil. Fry until golden brown. Turn so they will brown evenly.
Drain on paper towels.
They serve these with apple butter--Yum!
