Recipe: Cornish Game Hens with Cornbead Stuffing (using stuffing mix, pecans and bacon)

CORNISH GAME HENS WITH CORNBEAD STUFFING

4 Cornish Game Hens
Salt and pepper
4 strips of bacon, chopped
1/4 cup chopped onion
1/4 cup chopped celery
1/4 cup chopped pecans
1/4 cup chopped fresh parsley
1 1/2 cups packaged cornbread stuffing
3/4 cup water
1/2 cup (1 stick) butter, melted, divided use

Preheat oven to 350 degrees F.

Wash hens and season with salt and pepper; set aside.

Fry bacon remove from pan; set aside. Add onion and celery to bacon drippings in pan and saute for 30 seconds.

In bowl combine bacon, onion-celery mixture, parsley and (dry) cornbread stuffing mix. Add 3/4 cup water and 1/4 cup melted butter; mix well. Stuff hens loosely and place in a shallow roasting pan. Baste with some of the remaining butter.

Roast for 1 hour and 15 minutes or until done, basting with the remaining butter every 15 minutes.
