CORNSTARCH MERINGUE
This makes a real high meringue.
1 level tablespoon corn starch
2 tablespoons cold water
1/2 cup boiling water
3 egg whites
6 tablespoons sugar
a few grains of salt
1 teaspoon vanilla
Boil water to a boil in a small saucepan.
Dissolve corn starch in cold water. Add the corn starch mixture to the boiling water and cook, while stirring, until thick. Remove from heat and cool.
Beat egg whites; add sugar, salt, and vanilla. Turn mixer on high and beat egg whites until peaks form.
Fold in corn starch mixture and beat again until peaks form,
Put on pie and brown in oven.
