COUNTRY-STYLE POTATO SALAD
2 pounds cooked red potatoes, peeled and diced
3 scallions, cut into 1/2-inch pieces
10 cherry tomatoes, halved
2 hard-cooked eggs, chopped
1/3 cup mayonnaise
1/3 cup Grey Poupon Country Dijon Mustard
2 tablespoons red wine vinegar
1/2 teaspoon garlic powder
1/8 teaspoon ground black pepper
In a large bowl, combine potatoes, scallions, tomatoes and eggs; set aside.
In a small bowl, blend remaining ingredients; stir into potato mixture, tossing to coat well. Cover; chill at least 2 hours to blend flavors.
Makes 6 (1 l/4-cup) servings
