Recipe: Zesty Herbed Red Potato Salad (using lemon, garlic, parsley and dill)
Salads - Potato, PastaZESTY HERBED RED POTATO SALAD
FOR THE POTATOES:
2 pounds medium red potatoes (about 8) unpeeled, each cut into 8 bite-sized pieces
Grated peel of 1 lemon
Juice of 1/2 lemon (1 1/2 tablespoons)
1 medium clove garlic, minced
Salt and white pepper to taste
FOR THE POTATO SALAD:
1/3 cup low fat mayonnaise
1/3 cup light sour cream
1 cup sliced celery
1/2 cup chopped red onion
1 hard cooked egg, finely chopped
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh dill
TO PREPARE THE POTATOES:
On steamer rack over boiling water in large saucepot, steam potatoes, covered, for 20 minutes or until tender.
Remove cooked potatoes to a large bowl. Add lemon peel and juice, garlic and salt and pepper; toss gently. Cool, then cover and chill.
TO MAKE THE POTATO SALAD:
Stir together mayonnaise and sour cream; add to chilled potatoes with remaining ingredients. Toss lightly; chill.
Makes 6 cups
