FLAMING CARAMEL BANANAS
1 cup (heavy whipping) cream
1 dash each vanilla extract and grand mariner (add to whipped cream)
1/2 cup Grand Marnier, warmed in microwave
7 tablespoons (100 gm) butter
8 tablespoon brown sugar, packed
8 bananas, cut 1-inch thick
1 tablespoon lemon juice, to taste
Add a dash of vanilla extract and a dash of Grand Marnier to cream and whip until very thick.
Heat 1/2 cup Grand Marnier in a small ceramic milk jug. Do not boil.
Melt butter in deep frying pan, add brown sugar and caramelize. Add lemon juice, if using. Add bananas and brown.
Arrange banana onto service bowls, with whipped cream on side. When serving, set jug of Grand Marnier on fire (carefully) and pour over bananas.
Makes 4 servings
