Recipe(tried): Crab Cakes - No Mayo

Here you go. I have two actually. The first one is much more delicate than the second and I use it for really special occasions. Both are very good.1. Crab Cakes

1 pound crab meat
1/2 cup dry bread crumbs
1 tablespoon lime juice
1 egg, beaten
1 teaspoon Worcestershire sauce
3 tablespoons fresh dill weed
2 tablespoons scallions
4 tablespoons butter

Flake crabmeat. Combine with crumb, lime juice, egg, worcestershire sauce, dill and scallion. Mix well. Shape into 8 patties, place on plate, refrigerate 30 minutes. Melt butter in heavy skillet over medium heat. Cook 4 to 5 minutes on each side until golden brown. Serves 4.2. Victoria Crab Cakes

2 eggs, beaten
1/2 cup onions, chopped
1/2 cup green bell peppers, chopped
1/2 cup red bell peppers, chopped
3 tablespoons white wine
Worcestershire sauce
1 tablespoon lemon juice
1 teaspoon dry mustard
1/2 teaspoon cayenne
1 pound lump crabmeat
2 cups seasoned bread crumbs
4 tablespoons butter

Combine first 8 ingredients, stir in crabmeat and 1 cup breadcrumbs. Shape into 8 patties, dredge patties in remaining breadcrumbs. Fry in 2 tablespoons butter over medium heat until golden brown, adding additional butter as needed. Drain on paper towels.
