Recipe: Cream Cheese Apricot Cake

CREAM CHEESE APRICOT CAKE

4 matzah
1 cup sweet wine
5 eggs, separated
1 C sugar
1 C dried apricots
1/2 C hazelnuts
1/2 C raisins
1/2 C dried figs, chopped
8 oz. cream cheese
1 tsp vanilla

Crumble the matzah. Heat the wine and pour over the matzah. Let stand for 20 min.

Separate the eggs; beat the egg whites until stiff peaks form. Add half the amount of sugar gradually.

Chop all the dried fruits and nuts in a food processor or meat grinder.

Mix the dried fruits and nuts with egg yolks, matzah, cream cheese, vanilla, remaining sugar and egg whites,

Grease a 13 x 9 inch pan and bake at 325 for 50 minutes.
