FRUITY OATMEAL MUFFINS
2/3 cup milk
1/3 cup vegetable oil
1 egg
1 cup all-purpose flour
1 cup quick-cooking oats, uncooked
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup dried cranberries
Brown sugar (for sprinkling on tops, optional)
Heat oven to 400 degrees F. Grease bottoms only of 12 medium muffins cups, 2 1/2 x 1 1/4-inches, or line with paper baking cups.
Beat milk, oil and egg in large bowl. Stir in remaining ingredients just until flour is moistened. Divide batter evenly among muffin cups. Sprinkle with brown sugar if desired.
Bake 15 to 20 minutes or until golden brown. Immediately remove from pan.
