Recipe: Creamy Cucumber Soup (blender or food processor)

3 large cucumbers (approximately 2 1/2 pounds), peeled and seeded
1 large clove garlic
2 cups sour cream
salt and ground white pepper (to taste)
thin slices of cucumber (for garnish)
Cut cucumbers into pieces and put in bowl of food processor. Add garlic and run processor until the cucumbers are pulverized. Add sour cream, salt and white pepper to taste; blend well. Chill well.
Decorate each serving with a thin slice of cucumber.
Makes 6 to 7 cups
